Steam 2/3 rice
Prepare:
1 cup chopped celery
¼ cup chopped green pepper
Melt in a saucepan:
2 tbsp butter or other fat
Peel, chop and sauté in the butter until golden
1 medium sized onion
Add and sear:
1 lb ground round steak
Season with:
¾ tsp salt
¼ tsp paprika
Place in a greased baking dish 1/3 of the rice and ½ of the meat. Sprinkle over it ½ of the celery and pepper. Repeat this process. Place the last of the rice on top.
Pour over these ingredients:
1 can condensed tomato soup 10½ oz.
Seasoning to taste
Cover the dish and bake about ½ hour.

LAMP AND EGGPLANT CASSEROLE
4 servings:
Pare and chop until fine:
1 medium size eggplant
Combine with:
2 cups ground lamb (1 lb)
½ cup chopped onion
3 tbsp chopped parsley
1 tsp salt
¼ tsp paprika
½ tsp curry powder
1 cup canned chopped tomatoes
Butter a casserole dish. Fill it with the lamb mixture. Bake covered for about ¾ hour. Remove the cover and allow the top to brown.
